Founded in 1883, owners of Baoduzhang were the father and the son named Zhang Quancai and Zhang Dianzeng. Located in front of Shichahai, the restaurant has an elegant environment that has attracted plenty of officials of educational and cultural circles.

It is said that, as a family business, techniques and skills of making baodu (fried tripes) are only known by Zhang’s family and can only be inherited by Zhang’s offspring. With carefully selected ingredients and ancestral secret recipe, Baoduzhang enjoys a high reputation among the public.
