Dong Xing Shun, also known as Bao Du Zhang, was founded in 1883. The founder Zhang Quancai was born in Shandong Province. He fled from famine and went to Beijing. He was adopted by a spouse selling quick-scalded tripe. As the spouse did not have a child, they handed over the quick-scalded tripe stall to Zhang Quancai. After inheriting the quick-scalded tripe stall, Zhang Quancai adhered to the principle of "Put quality before quantity", and provided enthusiastic and thoughtful services. Over time, people habitually called it "Bao Du Zhang”. After reform and opening-up, the third generation of successor Zhang Yaoxing re-opened a quick-scalded tripe restaurant nearby Shichahai and officially named it as "Bao Du Zhang". At present, the restaurant sells 9 types of quick-scalded tripe. Apart from quick-scalded omasum, which is known to everyone, they also include quick-scalded lamb stomach (the best part of the tripe), Quick-scalded beef duren, quick-scalded lambomasum , Quick-scalded Lamb Duling (an uplift of the rumen), quick-scalded Esophagus, quick-scalded Reticulum, quick-scalded Mogutou (the bottom of the reticulorumen), and quick-scalded lamb Rumen.
